This easy, nutritious SunButter hummus recipe is a crowd-pleaser for football parties (including tailgating), holiday gatherings, office potlucks, after school snacks and other get-togethers.
Ingredients
Carrots, sliced1 large can garbanzo beans, drained
1/2 Tbsp. lemon juice
1/2 cup SunButter (we used Creamy)
1 – 2 cloves garlic, minced
1/2 tsp. white pepper
Green onions (scallions), sliced
Parsley leaves, if desired
Toothpicks
Directions
Combine all hummus ingredients in a food processor or mixer and puree to a smooth consistency.
Chill at least 1/2 hour. Spread onto large platter, and “plant” the carrots to look like a patch of little pumpkins (assemble each one by threading a piece of green onion and parsley leaf onto a toothpick, then add the carrot slice.)
