Summer Fun with SunButter Smoothies

Tuesday, July 26th, 2011

Hello. I’m Kristin and I’m the “mama” behind the STUFT mama blog. I’m a busy, race running, fitness instructing mom of troublemaking energetic toddler twin boys. Along with being a self-confessed SunButter addict, I love to experiment in the kitchen and create healthy meals that will please the whole family.

Summer is a perfect time for smoothies. Over here at the STUFT house, I make nutritious smoothies on a daily basis to make sure everyone’s getting their fruits and vegetables. I’m sure you know it’s not always easy to impress the picky toddler (or the picky husband), but I’ve managed to come up with some delicious smoothies that knock my boys’ socks (and shirts, apparently) off.

Here are a couple smoothie options to please anyone in the family.

I usually need something filling and with a little caffeine boost to start off my morning. This is my “go to” smoothie of choice.

Mama’s Mocha Morning Smoothie

  • 1 frozen banana
  • 1 tablespoon instant espresso or instant coffee (optional)
  • 2 tablespoons cocoa powder
  • 1 tablespoon SunButter
  • 1 ½ cup vanilla soy milk or vanilla almond milk

I usually add a handful of fresh spinach and a scoop of vanilla protein powder to the mix before blending. It makes it that much more delicious and nutritious. You can’t even taste the spinach, but it does make it a fun greenish/brown color.

My husband is a little pickier. He watches CLOSELY when I make his smoothie to make sure I don’t sneak in any “green stuff.”  I’m determined to sneak it in one of these days, but I haven’t figured out how to master my stealthy skills yet. This one tastes like a milkshake. Smooth, creamy, SunButtery, and it only has 3 ingredients. You can’t go wrong.

Dad’s Delectable “Milkshake”

  • 1 frozen banana
  • 1-2 tablespoons SunButter
  • 1 ½ cups vanilla soy milk

Sometimes I add a little Greek yogurt in it for protein, but it’s delicious without it and surprisingly very creamy.

For my 19-month-old twins, I try to get as many nutritious goodies in the mix that I can. They love their smoothies and usually come running when they hear the blender start up. Feel free to substitute in different frozen fruits, but we like this combination the best.

Toddler Time Smoothie Treat

  • ½ frozen banana
  • frozen strawberries
  • 1-2 tablespoons SunButter
  • 1 ½ cup vanilla soymilk
  • ½ cup strawberry flavored yogurt
  • Handful fresh spinach (optional)

This smoothie is amazing! It also works without the yogurt, but I like to add it for some extra protein. I can’t tell you how excited I get to experiment with different vegetables in their smoothies every day (I’ve even done kale, broccoli and carrots). I’m pretty sure they’re just as excited to drink them every day as well.

Here’s the spinach version. Fun color, right?

We’re a busy, on the go, active family that always finds time to get in our daily SunButter fix. If we skip adding it to our smoothies (gasp), it can usually be found smeared on our lunchtime sandwich, on top of our high protein microwave muffin

or in the middle of our banana French toast.

Thanks, Kristin, for guest blogging with us. We can’t wait to try your smoothie creations!

Q. What’s your absolute favorite SunButter smoothie recipe?

Peanut-free Super Bowl Menu Ideas

Friday, February 4th, 2011

Who’s looking forward to the Super Bowl this Sunday?

We are!

Watching football, seeing how many friends can fit in one living room and being entertained by the commercials are all fun activities. But, let’s face it: the Super Bowl wouldn’t be the Super Bowl without the food.

Planning a peanut-free Super Bowl menu can get tricky when dealing with peanut allergies. Luckily SunButter has some delicious peanut-allergy-friendly recipes to make your Super Bowl party a success. Here are just a few of our favorite picks for your Super Bowl menu:

Muddy Buddies
Also known as “puppy chow,” CHEX Sunny Muddy Buddies are a sweet and indulgent snack, perfect for game-time munching. Plus, the recipe makes “A LOT!” – so all your friends packed on your sectional can enjoy.

Pizza
Seriously, what’s a football game without pizza? We know it sounds weird, but SunButter actually substitutes as a really yummy pizza sauce. Don’t believe us? Try it for yourself, with the SunButter BBQ Chicken Pizza or the SunButter and Pepperoni Pizza (with jalapenos). Or, surprise your guests with a sweet SunButter and Jelly Pizza or Chocolate SunButter Pizza. These certainly beat delivery!

If you’re not sold on the idea of SunButter pizza, check out the SunButter Test Kitchen video:

Wings
This one, too, is a guy-necessity on game day. Why not adapt SunButter Chicken by cutting the chicken breasts into boneless, wing-sized bites? Note: you may need to increase the sauce ingredients, since you’ll be covering more surface area. We’d recommend 1.5x as much, and you could mix it up by adding some BBQ sauce, as desired. Mmm!

Hummus
There will always be those guests. You know, the ones who’d rather munch on a carrot than on muddy buddies (and if you’re one, kudos!). SunButter Hummus is an excellent way to add some deliciousness to the standard, boring veggie tray. And even the veggie-haters can enjoy it with tortilla chips (perhaps, team-colored to add more festivity?).

Something sweet
In case the muddy buddies aren’t enough, 4 Layer SunButter Brownies and Scotcheroos will keep everyone’s taste buds happy, tummies full and sugar high. Just be careful about the chocolate; some brands are processed in facilities that could contain peanuts. As always, use caution when selecting peanut-free ingredients.

So there you have it: a deliciously peanut-free Superbowl menu! The guys will never know the difference. And if you’re in it more for the eating than the football-watching, that’s perfectly fine with us!

The SunButter® challenge begins

Tuesday, April 6th, 2010

A few weeks ago I introduced a SunButter® Challenge to my co-workers. Over time, the plan is for a bunch of self-admitted cooking novices to try some SunButter® recipes. So the first results are back.

I knew Sarah would be willing because she loves SunButter®. I often see her squeezing those little individual packets onto toast or apple slices, or straight into her mouth. She’s never cooked with it, however.

I sent her home with the recipe that I found at another site for SunButter Cookie Candy and she documented the process through pictures.

Pretty basic ingredients. Nothing you wouldn’t have on hand.

The antique hand mixer and the hand-me-down mixing bowl are proof that Sarah doesn’t cook much. (No offense Sarah, retro is in, right?) She said the mixture was pretty stiff and gave her old mixer a workout—definitely would be better to use a stand mixer.

Once the chocolate layer went on, the finished product went right into the fridge. Not the best idea, because, later, the chocolate wanted to crack rather than cut.  After the fact, we learned you should always cool melted chocolate at room temp before refrigerating.

Sarah said she’ll definitely make these again. Next time, though, she’ll make them in mini-muffin cups with a little chocolate layer on both the top and bottom. “It tastes just like a Reese’s peanut butter cup—it may as well look like one,” she says.

Best of all, our guest cook brought these to work and shared with others. Their thoughts:

  • “I enjoyed my piece with coffee this morning. It tasted very similarly to a Reese’s Peanut Butter cup. The SunButter tasted like crunchy peanut butter to me. Yum!”
  • “wow!”
  • “That’s good stuff”
  • “Wow!  That’s good stuff.”
  • Yum! I loved that they have the whole seeds in as well.
  • And my favorite,
  • “These are flippin delicious.”

Do you think you would try these? What do you think of Sarah’s mini-muffin pan idea? If you’ve made these, or think you might, let me know.

Are they ready for SunButter® recipes?

Sunday, March 14th, 2010

I discovered SunButter® a while ago and love it! Now I want to share the love. And how does one get people excited about something? Simple…feed them. That’s exactly what I intend to do.

I’ve devised a plan that starts with my co-workers. My strategy: each weekend I’m going to offer to send someone home with a SunButter® recipe and a jar of SunButter®, ask them to make the item and to document the process. I’ll also ask them to rate the recipe and SunButter® itself, then report back on Monday. Check back in early each week and I’ll post their results.

I’ll start by suggesting a recipe for SunButter Cookie Candy that I found on the Art of Dessert blog. The photo makes my mouth water and the recipe looks pretty simple to follow. I can just taste that salty-sweet combination. Yummmmm.

Do you think anyone will take me up on the offer? I’d love to hear your ideas on making this successful.  BTW, if you have a favorite SunButter recipe, lay it on me. I’ll see if I can get someone to bite (pun intended).

Best job in the world

Friday, March 12th, 2010

SunButterThink of your dream job. You would likely choose to work with something you’re really passionate about. Then imagine being able to chat with others about your passion as often as you like. That’s what I get to do.

So what exactly does that mean? In this case, it means I get to introduce to you the SunButter® Lovers blog.

This is the place you can get—and give—tips and tricks for using this addicting food. You’ll find resources for SunButter® coupons and samples. You can try SunButter® recipes, find out who else is trying recipes and read and write reviews. Here you can share your stories about nutrition, allergies, cooking, or whatever.

This is a place where you can_________(you fill in the blank). Sky’s the limit. The SunButter® Lovers blog will become what you want it to be.  I just get to be the lucky one to facilitate it all. So tell me what you’d like to see and I’ll do my best to oblige.
