Banana-Rum Bundt Cake with SunButter Icing
Ingredients
- 2 cups flour
- 2 t baking soda
- 1/2 t salt
- 1/4 cup margarine
- 1 cup sugar
- 2 eggs
- 1/2 t rum extract
- 1/2 t vanilla
- 1 cup mashed banana
- 1/2 cup pecans
- 4 T SunButter®
- 4 T milk
- 1 1/2 cups sifted powdered sugar
Directions
Heat oven to 350°. Grease and flour a bundt pan. Sift together dry
ingredients. Cream margarine until fluffy; add sugar and beat well. Add
eggs and flavorings. Beat until well blended. Add sifted dry ingredients
alternately with mashed banana, beating well after each addition. Fold
in pecans and pour into pan. Bake for 35-40 minutes until toothpick
comes out clean. Cool slightly and frost with SunButter® Icing.
SunButter® ICING:
Blend together well and drizzle over the cake, allowing some to run
down the sides. (May need to adjust the amount of milk or powdered
sugar to get the consistency you want.)
