Iced Apple Cookies
Ingredients
- 2 1/2 cups flour
- 1/2 t baking soda
- 1 t cinnamon
- 1/2 t salt
- 1/4 t cloves
- 1/4 t nutmeg
- 1 1/3 cups packed brown sugar
- 3/4 cup plus 2 T margarine
- 1 large egg
- 1/2 cup SunButter®
- 1 cup sunflower kernel
- 1 cup raisins
- 1 cup chopped red delicious apples
- 1/2 cup plus 2 T apple cider
- 3 cups powdered sugar
Directions
Preheat oven to 350°. Combine flour, soda, cinnamon, salt, cloves, and nutmeg. Cream the sugar, 3/4 cup margarine, and SunButter® until light and fluffy. Add egg and beat until incorporated. Gradually add flour mixture and beat until combined. Stir in nuts, raisins, apples and 1/4 cup cider. Drop by heaping T 2” apart. Bake 18 to 22 min. Cool.
Frost. In a small bowl combine until smooth the powdered sugar, remaining cider, and margarine. Drizzle about 1 T of icing over each cookie. Store in airtight container. These freeze well.
