SunButter Noodles


8 oz linguine, thin spaghetti or soba
1 cup broccoli florets
1 1/2 tablespoons sesame oil
1 medium garlic clove, chopped
1 tablespoon chopped peeled fresh ginger
1/2 cup SunButter
1/4 cup soy sauce
1/3 cup warm water
2 tablespoons rice vinegar
1 tablespoon honey
1/2 – 1 teaspoon dried hot red pepper flakes or a splash of the hot sauce (depending on taste)


1. Cook pasta in a large pot of boiling water until al dente. When pasta is almost done, add broccoli for last minute of boiling. Drain.
2. Meanwhile, combine oil and garlic in a small skillet. Saute over low heat until tender. Add ginger; cook and stir for 1 to 2 minutes. Mix in SunButter, soy sauce, water, vinegar, honey, and red pepper. Remove from heat.
3. Toss noodles with sauce, and serve. Or, refrigerate and have cold noodles later. Tofu makes a wonderful addition to this recipe, as do many other vegetables. Steam lightly or toss in with noodles during last bit of cooking to blanch (red or yellow peppers, carrots, peas, almost anything you want, like, or have on hand)
