Sweet Lip's SunButter Eggs
Ingredients
1/8 lb. butter
4 ounces of light cream cheese
1 lb. confectioners sugar
1 cup SunButter
dash of vanilla extract
pinch of salt
1 bag of milk chocolate chips
Directions
Combine the first 6 ingredients in a large bowl. Mix with a hand blender until creamy. Roll into balls, place on wax paper, and freeze for 5 minutes.
Meanwhile, melt chocolate chips in a measuring cup in the microwave. Be careful not to burn the chocolate. (I used short intervals of 20 seconds, stirring each time.)
Take the rolled eggs out of the freezer and dip into the chocolate. Place eggs back on wax paper and, when you’re done, place in refrigerator to harden.
Makes approximately 24 eggs.
