Coconut SunButter Butterscotchies
1/4 cup margarine or butter (softened)
3 tbsp. packed brown sugar
2 tbsp. granulated sugar
1 egg, beaten
1/2 tsp vanilla extract
1/8 tsp baking soda
Pinch of salt
3 Tbsp all purpose flour
2 Tbsp whole wheat flour
Heaping half cup of organic oats
3 Tbsp shredded sweetened coconut
3 Tbsp Sunbutter (I used organic but if you use regular, just omit salt in recipe)
3 Tbsp. butterscotch chips (we used Vermont Nut Free's chips)
Preheat oven to 350 degrees.
Prepare pan: line baking sheet with parchment paper. Set aside.
Cream butter and sugars together then sttir in egg and vanilla. Mix baking soda, salt and flour with whisk in separate bowl. Add to wet ingredients until just combined. Pour in remaining ingredients and stir. Scoop small spoonfuls onto prepared pan and bake 8-9 minutes, rotating the pan half way through. Cool 3 minutes on the pan and remove to cooling rack.
