Sweet SunButter Caramel corn with Sea Salt
• 2 (3.5 ounce) packages microwave popcorn, popped
• 1/2 cup Earth Balance Shortening or other Dairy Free margarine
• 3/4 cup brown sugar
• 1/4 cup SunButter
• 20 large marshmallows - large
• Sea Salt - optional
Pour popcorn into a large bowl. In a glass or plastic bowl, combine the margarine, SunButter,
brown sugar, and marshmallows. Cook at 1 minute intervals in the microwave, stir well with a
whisk until the marshmallows are fully melted. Pour mixture over popcorn and sparingly
sprinkle sea salt over caramel corn. Store in air tight container. I don’t know how long it will
last since we eat it within days.
SunButter caramel corn recipe...this one never lasts...so tasty and it makes a great gift-nut free,
dairy free, egg free, gluten and sesame seed free and yes, it can be Vegan too!
